Ingredients

For the Blondies:

  • 1 cup Butter, softened at room temperature
  • ¾ cup Granulated Sugar
  • 1 Large Egg, room temperature
  • ¼ cup Fresh Lemon Juice
  • Zest of 1 Lemon
  • 2 ¼ cup All-Purpose Flour
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Fresh Strawberries, diced
  • ½ cup White Chocolate Chips

For the Glaze:

  • 1 cup Powdered Sugar
  • 1 Tablespoon Strawberry Puree (from about 2 strawberries pureed)
  • 2 Tablespoons Milk

Instructions

For the Blondies:

  1. Preheat the oven to 350°F (175°C) and line a 9×9 inch (23×23 cm) pan with parchment paper, allowing some overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, using a stand mixer or hand mixer, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes). Scrape down the sides of the bowl as needed.
  4. Add the egg, fresh lemon juice, lemon zest, and vanilla extract. Mix until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until *just* combined. Be careful not to overmix the batter.
  6. Gently fold in the diced fresh strawberries and white chocolate chips with a wooden spoon or spatula until evenly distributed.
  7. Pour the mixture into the prepared baking pan and spread it out evenly with a spatula. Gently tap the pan on the countertop a couple of times to level the batter.
  8. Bake for 35-40 minutes, or until the edges are lightly browned and a toothpick inserted into the center comes out with moist crumbs (not wet batter). The center should still be slightly soft.
  9. Remove from the oven and let the blondies cool completely on a wire rack in the pan.

For the Glaze:

  1. While the blondies cool, puree 2-3 strawberries in a food processor or blender until smooth.
  2. In a small mixing bowl, combine the powdered sugar, strawberry puree, and 1 tablespoon of milk. Whisk until smooth.
  3. Add the second tablespoon of milk gradually, a little at a time, until you reach your preferred pourable consistency. If the glaze is too thick, add a bit more milk; if too thin, add more powdered sugar.
  4. Once the blondies are completely cool, pour the glaze over the top and spread it evenly with a knife or offset spatula.
  5. Allow the glaze to set for at least 15-20 minutes before lifting the blondies out of the pan, slicing into squares, and serving. Enjoy!
