  1. Preheat the oven to 350 degrees F. Prepare a 12″ pizza pan with nonstick cooking spray.
  2. Press the sugar cookie dough evenly into the pizza pan leaving some space around the edge of the pan.
  3. Bake for 8-10 minutes. The center will be soft but as it cools, it will continue to set.
  4. Allow the sugar cookie crust to cool completely at room temperature.
  5. While the cookie crust cools, make the frosting.
  6. Use an electric mixer to combine the cream cheese, butter, powdered sugar and vanilla until well combined. The texture should be light and fluffy.
  7. Once the cookie has completely cooled, spread the frosting evenly over the crust.
  8. Top with the fruit. You can create a design or scatter the fruit on top.
  9. Slice with a pizza cutter, then it’s ready to serve and enjoy!

Crust: I made the crust on this recipe twice. The first time I baked the crust for 15 minutes and it was crispy similar to thin crust pizza. I made it a second time and baked it for 8 minutes and it was softer and I preferred the softer crust over the crispy crust. Oven times vary so check the crust after 8 minutes and continue checking until the edges are set and if you prefer a crispier crust, cook for 15 minutes.

Storage: Cover any leftovers with plastic wrap and refrigerate for up to 2-3 days. Any longer, and the juice from the fruit will make the fruit pizza soggy. It is best served within 12 hours of making it.
