Instructions

For the Coffee Cake:

  2. Mix together the softened butter and granulated sugar in a large bowl with a hand-held mixer or stand mixer until light and fluffy.
  3. Stir in the mashed bananas, egg, sour cream, and vanilla extract. Mix until well combined and smooth.
  4. In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.

For the Crumb Topping:
